From ancient origins, the Primitive is a wine of unique features:
· Color: deep red leaning towards purple and orange with ageing;
· Perfume: very intense, full, characteristic and persistent;
· Taste: full, full-bodied and harmonic.

These strong and persistent peculiarities made this Primitive wine a very fine blending wine to strengthen northern wines.

Commonly named "Rosso di Sava" (red of Sava) or "Primitivo di Sava" (primitive of Sava) (because in the town of Sava was obtained a better production of wine due to the high quality of its vineyards and the care of its cultivation and vinification) as time went by it started to be esteemed always more, reaching the consecration with the recognition of D.O.C. (appellation controlée), high-quality wine.

This is how the Primitive wine of Manduria was born, getting its name by the town where the railway station resided, gathering and departure point of all the wine produced in the country area.

The disciplinary dated march 4th 1975 provides:

· Refund per hectare: 90 quintals;
· Minimum alcoholic strength: 14%;
· Total minimum acidity: 0.5 percent;
· Compulsory ageing: minimum 9 months;
· Communes of production: Manduria, Carosino, Monteparano, Leporano, Pulsano, Faggiano, Roccaforzata, San Giorgio Jonico, San Marzano di San Giuseppe, Fragagnano, Lizzano, Sava, Torricella, Avetrana, a hamlet of Talsano, Erchie, Torre Santa Susanna and Oria.

Exceeded a total natural minimum alcoholic strength of 15% vol. (dry) it is able to obtain a primitive wine:

· Natural sweet: total minimum alcoholic strength 16 (effective at least 13, to carry out minimum 13);
· Natural sweet liqueur- like: total minimum alcoholic strength 17,5 (effective at least 15, to carry out minimum 2,5) ;
· Dry liqueur-like: total minimum alcoholic strength 18 (effective at least 16,5, to carry out minimum 1,5).

Gastronomic combinations: dry Primitive wine of Manduria goes well with first courses of stout meat sauces, big roasts of red meat and games, mature cheese. Natural sweet Primitivo wine of Manduria is excellent for great moments of meditation, perfect with desserts, dry marzipan pastry, macaroons and fruit pies.
